Pouding De Chomeur ( Chomeur Pudding Or Poor Man'S Pudding )
- Cake
- 1/2 cup melted butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cup flour
- 1 tablespoon baking powder
- 1 1/3 cup milk
- Creamy Maple Sauce
- 1 1/2 cup maple syrup
- 1 1/2 cup brown sugar
- 1 1/2 cup cream (35%)
- 1/3 cup butter
- Preheat the oven at 325F (160C).
- Cake
- In a large bowl, with an electric mixer, mix the butter and sugar until the mixture is light. Add the eggs and vanilla and mix. In another bowl, mix the flour and baking powder. Add the dry mixture to the butter mixture alternating with the milk, mixing thoroughly. Pour the batter in greased oven proof (9"X13") dish or twelve ramekins. Put aside.
- Creamy Maple Saauce
- In a large saucepan, bring the syrup, sugar, cream and butter to a boil while stirring over medium high heat. Lower the heat and simmer for two minutes or until the sauce has been slightly reduced.
- Slowly and delicately spoon the sauce over the cake batter.
- Bake in preheated oven for about 35 minutes or until the pudding is golden brown and a toothpick comes out clean.
- Serve warm or at room temperature.
- *Serving tip*
- Use ramekins, serve on a plate with a nice scoop of fresh whipped cream (use the rest of the 35% cream, I always get the 500ml for this purpose) or gelato beside the ramekin.
