Coffee Cake
- 2 1/4 cups white flour
- 1 cup firmly-packed brown sugar
- 3/4 cup sugar
- 3/4 cup canola oil
- 2 1/2 tsp cinnamon
- 1 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/2 cup chopped walnuts ( or almonds or pistachios)
- 1/2 tsp cinnamon
- 1 cup buttermilk ( or 1/4 cup lowfat sour cream + 3/4 cup milk, blended)
- 1 egg, beaten lightly
- 1 tsp baking powder
- 1 tsp baking soda
- Preheat oven to 350.
- Grease 9x13 baking dish.
- Blend first 7 ingredients in large bowl & blend well.
- Transfer 1/2 cup of mix to small bowl.Stir in walnuts and 1/2 tsp cinnamon and set aside.
- Add buttermil, beaten egg, baking powder & baking soda to remaining mixture in large bowl and blend thoroughly.
- Pour batter into prepared dish, spreading evenly. Sprinkle nut mixture over the top.
- Bake until tester inserted in center of cake comes out clean, about 35 - 40 min. Serve warm from oven, or let cool.
