Apple And Pork Casserole
- 1/4 c. chopped onion
- 1 Tbsp. shortening
- 1 can cream of chicken
- 3 Tbsp. brown sugar
- 1/4 tsp. cinnamon
- 3 c. cubed, cooked pork
- 2 tart apples, peeled and chopped
- mashed potatoes (4 servings)
- 1/4 c. milk
- dash of pepper
- 1 beaten egg
- 1/2 c. shredded American cheese
- In saucepan, cook onion in shortening until tender.
- Stir in soup, sugar and cinnamon.
- Add pork and apples.
- Mix well.
- Spoon mixture into a 8 x 1 1/2-inch round baking dish.
- Prepare potatoes using 1/4 cup milk and a dash of pepper.
- Blend egg into potatoes. Spoon potatoes in 6 mounds atop pork mixture.
- Bake, uncovered, at 350u0b0 for 25 minutes.
- Sprinkle with shredded cheese.
- Return to oven until cheese melts, about 5 minutes.
- Makes 6 servings.
