Studio755: Brown Rice Pudding W/Apricots & Medjool Dates
- 2 cups cooked brown rice
- 2 cups almond milk (cow or rice milk would work too)
- ~1+ Tbsp honey
- ~1 tsp cinnamon
- ~1/2 tsp nutmeg
- ~1/2 cup chopped dried apricots
- ~1/2 cup chopped medjool dates
- ~1/2 cup sliced almonds
- In medium saucepan, put everything but the nuts into a medium saucepan and bring to a light boil.
- Reduce heat to a light simmer, stirring regularly, until liquid is absorbed - about 20 mins.
- (Halfway through, taste and adjust sweetness with more honey if needed)
- Stir in almond slices and garnish with more cinnamon, if desired.
- Can serve warm or room temp.
- (Priya had idea to serve with dollop of greek yogurt, which sounds divine!)
