Curried Couscous
- 1 1/2 cups couscous
- 1 1/2 cups boiling water
- 1 tbls. butter
- 1/2 cup Greek yogurt
- 1/2 cup olive oil
- 2 tsp. white wine vinegar
- 2 tsp. curry powder
- 1/2 tsp. tumeric
- 2 tsp salt
- 1 tsp. pepper
- 1 cup shredded carrots
- 1/2 cup flat leaf parsley, finely chopped
- 1/2 cup raisins
- 2 scallions, thinly sliced
- 1/4 cup slivered or sliced almonds
- Place couscous in bowl. Boil water and butter in microwave. Pour over couscous and mix. Cover bowl and let sit for 10 minutes. Fluff the couscous with a fork.
- Whisk yogurt, oil and seasonings together. Add to couscous. Then add the rest of the ingredients, mixing well. Serve at room temperature or cold.
