Turkey & Black Bean Chili
- 1/2 chopped onion
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 1/2 cup chopped carrots
- 1 clove chopped garlic
- 1 Tbsp olive oil
- 2 Tbsp chili powder
- 3 tsp ground cumin
- 1 lb extra lean ground turkey, cooked and drained
- 2 cans, rinsed & drained black beans
- 3 cups reduced sodium chix broth
- 16 oz fresh mild salsa
- 1 Tbsp low-sodium tomato paste
- ground pepper to taste
- Optional garnish: sour cream, chopped cilantro, diced tomato, cheddar cheese
- Cook turkey (or beef) in a skillet, drain extra oil and fat. In a large sauce pan, cook over medium-low heat the onion, peppers, carrots, and garlic in hot oil until golden brown and tender. Sprinkle with chili powder and cumin. Cook stirring frequently 7 to 8 min. Add cooked turkey (or beef) and mix. Add beams, broth, salsa, and tomato paste. Bring to a simmer and reduce heat to med. Stir occasonally. Cook 45 min or until thickened.
