Thai-German Fusion Pasta
- Green Curry with Speatzle:
- Ingredients:
- 100 ml of Coconut milk
- 1 chicken breast
- 4 Sweet basil leaves
- Palm sugar and salt(for taste)
- 2 table spoons Curry paste
- Drinking water
- 4 Lime leaves
- 1 Fresh Chilli
- 2 different kinds of eggplant- 5 Turkey berry and 2 Cockroach berry or You can use Thai aubergine
- Spaetzle Ingredients (Alternatively you can buy)
- 2 eggs
- A pinch of salt
- 200 grams All purpose flour
- Half a cup of Milk
- 1) Add 3-4 Table spoons of coconut milk, then add 1-2 table spoons of green curry paste in the pan. Cut and peel your eggplant and soak them in water with a pinch of salt.
- 2) Stir the paste and coconut milk until you see greenish oil forming.
- 3) Slice chicken and add it into mixture.
- 4) Once chicken is cooked put the rest of the coconut milk into the mixture and continue stirring
- 5) Add water to get the curry to the right consistency
- 6) Put eggplants into the mixture.
- 7) Add basil and for taste add palm sugar or salt .
- Speatzle Recipe
- 1) Measure 200 grams of flour then pour into a bowl and make a hole, Crack the eggs into the hole.
- 2) Get a fork and start to mix the egg with the flour until you get a nice, smooth texture.
- 3) Then use your hands to knead the dough until most of the crumbs are gone.
- 4) Find a small clean space where you can continue kneading your dough.
- 5) Once the dough has a nice and smooth texture, roll it into a circular shape and wrap it in the plastic film, leave to set for 20-30 minutes
- 6) Start to boil water for the pasta to cook.
- 7) Once the water is boiling, make your green curry.
- 8) Once the green curry is cooked, Remove plastic from the pasta dough and get your speatzle maker.
- 9) Put the pasta dough into the speatzle maker and start to push the handle down, put the pasta directly into the boiling water, and once the pasta is the right length take a knife and slice it, keep that system going until all of the pasta is in the boiling water
- 10) If your pasta dough is hard to push out take the dough out and add some milk and keep adding until the pasta is at the right consistency.
- 11) Leave the pasta to cook for 5 minutes
- 12) Once the pasta is cooked slice chilli and get lime leaves to use as garnish for the dish, then pour the curry onto your pasta.
- To plate the dish slice chilli and use it as garnish and also add some lime leaves. (optional)
