Orange Carrot Cake
- 1 large orange
- 2 c. unsifted flour
- 2 c. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 1 tsp. salt
- 1 1/4 c. salad oil
- 4 eggs
- 2 c. grated carrots
- 1/2 c. chopped nuts
- Wash orange; cut into 8 wedges.
- Remove white center; cut wedges into 3 or 4 pieces.
- Remove any seeds; puree in electric blender.
- In large mixing bowl, stir together flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg.
- Add oil, orange puree and eggs; mix thoroughly.
- Blend in carrots and nuts.
- Pour into greased and floured 9 x 15 x 3-inch pan.
- Bake in moderate 350u0b0 oven for 1 hour, or until cake tester comes out clean.
- Remove from oven; cool cake in pan.
- Cut into squares or slices.
- Dust with confectioners sugar before serving.
- Serves 12.
