Heart Healthy Double Chocolate Crinkles
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon low salt
- 5 tablespoon Butter Flavor Crisco
- 6 tablespoons Hershey Cocoa
- 1 cup Splenda sugar substitute
- 1/2 cup egg substitute
- 1 teaspoon pure vanilla extract
- 1/2 cup Hershey Dark Chocolate Chips
- Reserve: bowl of powdered sugar or Splenda for rolling cookies in before baking
- Sift together all dry ingredients and set aside. In small saucepan, melt Crisco, add cocoa and chocolate chips and blend until smooth. Remove from heat and stir in Splenda until combined. Transfer into mixing bowl, add egg substitute and vanilla, beat until well blended. Add dry ingredient mixture and mix until just blended. Chill dough for at least 4 hours. Preheat oven to 400 degrees. Take 1 teasoon of dough and roll into a ball, roll ball into either reserved powdered sugar or Splenda. Place sugar coated balls onto greased cookie sheet or use parchment paper, 2 inches apart on sheet, bake 8 minutes, let cool a minute and then remove from pan. Store in air tight container to maintain the soft and chewy texture.
