Smothered Cabbage Wedges
- 1 medium head cabbage, cut in 8 wedges
- 1/2 c. finely chopped green pepper
- 1 c. finely chopped onion
- 4 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. milk
- 1/2 c. mayonnaise or salad dressing
- 3/4 c. shredded natural Cheddar cheese
- 3 Tbsp. chili sauce
- In Dutch oven or large skillet, cook cabbage wedges in small amount of boiling salted water until tender (about 12 minutes). Drain.
- Place wedges in 13 x 9 x 2-inch baking dish.
- In saucepan, cook pepper and onion in butter until tender but not brown.
- Blend in flour, salt and pepper.
- Add milk all at once, cook and stir until mixture thickens.
- Pour over cabbage.
- Bake, uncovered, at 375u0b0 for 20 minutes.
- Combine mayonnaise, cheese and chili sauce. Spoon on wedges and bake 5 minutes more.
