Applesauce Whole Wheat Cake
- 1 3/4 cups granulated sugar
- 1/4 cup bottled prunes, pitted and ran through food processor
- 1 egg
- 1/2 cup non fat yogurt
- 2 cups applesauce
- 1 teaspoon grated orange rind
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1 cup whole wheat flour
- 1/2 cup bran
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 3/4 cup currants
- Butter and flour a 10 inch bundt pan. In mixing bowl, combine sugar and prunes; beat until mixed. Add egg and beat until light in color. Add yogurt and beat until mixed. Beat in applesauce, orange rind and vanilla.
- In another bowl, combine the flours, bran cinnamon, baking soda, baking powder and currants; stir to mix. Pour dry ingredients over applesauce mixture and stir until combined.
- Pour into greased and lightly floured pan and bake in 325 oven for 70 to 80 minutes or until toothpick inserted in center come out clean. Let cool on rack for 20 minutes and then remove from pan.
