Hash Brown Potato Casserole
- 1 (32 oz.) pkg. frozen hash brown potatoes
- 1/2 c. melted butter or margarine
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. finely chopped onion (optional)
- 1 c. sour cream
- 1 can cream of chicken soup
- 2 c. grated sharp Cheddar cheese or American cheese
- 2 c. crushed potato chips or 1 c. crushed cornflakes
- 1/4 c. melted butter
- In a large mixing bowl, combine the shredded cheese, chicken soup, sour cream, chopped onion, 1/2 cup melted margarine, salt and pepper.
- Mix well.
- Fold in the thawed hash brown potatoes. Turn mixture into a greased 9 x 13-inch baking dish.
- Toss together cornflakes or potato chips and 1/4 cup melted butter. Sprinkle over potato mixture.
- Bake at 350u0b0 for about 1 hour or until the casserole is golden brown and the potatoes are tender.
