Fresh Tomato Pasta

  1. Bring pot of salted water to boil for pasta
  2. Cook pasta to al dente stage
  3. Dice tomatoes into small dice
  4. Melt butter in large saute pan
  5. Saute diced tomatoes with salt to taste- the butter and tomatoes will form a somewhat creamy sauce.
  6. Cook approx. four minutes.
  7. When pasta is done, use a slotted spoon or other appropriate tool to remove pasta from water and place in the saute pan with the tomato sauce. If too dry add a ladle or two of the pasta cooking water to the pan That is it ! Easy Peasy!
  8. If desired one can add minced garlic to pan with the tomatoes.
  9. Use your imagination. You could add shredded or grated cheese, chopped fresh herbs (parsley or basil for example) or cooked fresh spinach, peas. Kids usually eat anything on pasta! This is a good way to use up the abundance of tomatoes from your garden that ripen all at the same time. how quick and easy can a recipe be.
