Aussie Apple And Coconut Bars
- 1 cup all-purpose flour
- 3/4 cup sugar
- 2 1/2 cups desiccated (finely shredded) coconut
- 1/2 cup butter, melted
- 5 medium Golden Delicious apples, peeled, cored and sliced
- 3 eggs
- 1 tsp ground cinnamon
- 1. Preheat oven to 350u0b0F. Grease a 7 x 11" pan well.
- 2. Combine flour, 1/2 cup sugar, 1/2 cup coconut and butter in a medium bowl and mix well to combine. Press mixture evenly over pan base. Bake for 12 minutes or until light golden.
- 3. Meanwhile, place apples into a large microwave-safe dish. Cover with a lid or plastic wrap and cook for 5 minutes on High/100% or until almost tender but still holding their shape. Remove cover, drain excess moisture and set aside to cool for 5 minutes.
- 4. Combine remaining sugar, coconut, and eggs in a medium bowl.
- 5. Spoon apples over warm crust and sprinkle with cinnamon. Spread coconut mixture over apples, pressing down firmly. Bake for 20-25 minutes or until golden. Set aside to cool in pan. Slice and serve.
