Basic Pizza Dough
- 1 teaspoon fast-rising yeast
- 1/2 cup plus 1 Tablespoon warm water
- 1 1/2 cup flour
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 tablespoon olive oil, plus 1 teaspoon for coating
- A handfull of ground cornmeal for rolling out the dough in.
- Mix together the dry ingredients: flour, sugar, salt, yeast.
- Add the warm water and oil, mixing first with spoon, then with your hand, gently rolling the dough over and punching it in, to finally get a soft smooth and elastic dough, kneading for 5 minutes. When done, the dough should be slightly tacky, that is, it should be barely beyond sticking to your hands. Lightly oil the dough, Place the dough in a bowl, cover with a a clean tea towel and place in a warm draft-free place. Let rise to double. Punch down and divide into two, for two 9" pizzas, let rest again for about 1/2 hour before rolling out in the cornmeal, to put toppings on.
