Chicken With Cashews And Snow Peas
- 1 whole chicken breast, split, skinned, boned and cut in 1-inch cubes
- 2 cloves garlic, peeled and minced
- 1 Tbsp. soy sauce
- 1 Tbsp. dry sherry (optional)
- 2 Tbsp. cornstarch
- 1 tsp. hoisin sauce (optional)
- 1 Tbsp. peanut oil
- 20 snow peas, ends and strings removed
- 1/2 c. sliced water chestnuts, drained
- 1/2 c. hot chicken stock
- 1/2 tsp. salt
- 1/2 c. unsalted raw cashews
- Marinate chicken 15 minutes in mixture of next 5 ingredients. Heat oil in uncovered wok at 375u0b0.
- Add chicken mixture; stir-fry 3 minutes.
- Add snow peas and water chestnuts; stir-fry 30 seconds.
- Add stock and salt; stir-fry until slightly thickened. Stir in cashews; stir immediately.
