Tofu Squares (Great Kid'S Snack)
- 2 pounds firm tofu
- 1/2 cup whole wheat flour
- 1/2 cup cornmeal
- 1/2 cup nutritional yeast
- 1 tablespoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayanne pepper (optional)
- cooking spray
- Buffalo wing sauce (optional)
- Mix all dry ingredients in large ziplock bag. Squeeze or press tofu to remove enough water so it doesn't drip when lightly squeezed, then cut it into squares about 1/4 to 3/8 inch thick (cut down the middle lengthwise then across the 2 halves). Place squares in ziplock with dry mixture and gently toss to thoroughly coat each square. Place in single layer on lightly sprayed (oiled) cookie sheet and then lightly spray tops with cooking oil. Bake at 300 degrees for 30-35 minutes until browned. Serve by themselves or they are great with Frank's buffalo wing sauce(Tastes like chicken buffalo wings, from what I remember chicken tasting like). My kids love them.
