Whole Wheat Bread

  1. 12-24 hours before soak and/or cook any whole grains/seeds you wish to add. Cover the seeds so there is one inch of water above them.
  2. 1. Make the starter, let it rise and get gooey (10-20 minutes).
  3. 2. Meanwhile, mix the other ingredients in a bowl. Once the starter smells yeasty, mix in with the rest of the ingredients and knead for up to 15 minutes.
  4. 3. Let dough rest for 2 hours until doubled.
  5. 4. Punch the dough down and form into loaves. Place the loaves into two well oiled bread pans and let it double again 45-90 minutes.
  6. 5. Bake for 35-50 minutes at 350 degrees.
