Whole Wheat Bread
- Starter:
- 1 cup flour
- 1 Tbsp yeast
- pinch of sugar
- 1 cup warm water
- Main Bread:
- 1/4 cup flaxseed
- 1/4 cup quinoa
- 1/4 cup millet
- 1/4 cup oats
- 2 cups whole grains
- 1 cup water
- 1 Tbsp oil
- 1 Tbsp salt
- 3 cups whole grain flour
- 2-3 cups flour
- 1/4 cup honey
- 12-24 hours before soak and/or cook any whole grains/seeds you wish to add. Cover the seeds so there is one inch of water above them.
- 1. Make the starter, let it rise and get gooey (10-20 minutes).
- 2. Meanwhile, mix the other ingredients in a bowl. Once the starter smells yeasty, mix in with the rest of the ingredients and knead for up to 15 minutes.
- 3. Let dough rest for 2 hours until doubled.
- 4. Punch the dough down and form into loaves. Place the loaves into two well oiled bread pans and let it double again 45-90 minutes.
- 5. Bake for 35-50 minutes at 350 degrees.
