Roasted Organic Green Beans With Lemon, Pine Nuts & Parmesan

  1. Preheat oven to 450u0b0F.Put beans in large mixing
  2. bowl. Peel garlic and quarter each clove lengthwise. Add garlic
  3. to green beans. Toss together with 1/4 cup of olive oil, 1 Tablespoon
  4. lemon zest, salt and pepper. Spread beans on a rimmed
  5. baking sheet and roast on the middle rack of the oven for 10
  6. minutes. Give the beans a stir. Continue roasting until the beans
  7. and garlic pieces are lightly browned and tender throughout, 10
  8. to 15 minutes longer.
  9. Meanwhile, toast the pine nuts in a small
  10. pan. Heat the pan and toast them dry over low heat, stirring
  11. constantly until they begin to brown lightly and give off that
  12. toasted nut scent. Transfer the beans to a small serving platter or
  13. shallow bowl; add lemon juice and the remaining 1 Tablespoon
  14. olive oil. Toss gently to coat and season to taste with additional
  15. salt and pepper. Sprinkle on the toasted pine nuts, lemon zest to
  16. taste, the Parmesan, and the chopped herbs. Serve hot or at
  17. room temperature.
