Garlic Shrimp With Onions And Peppers
- 1 lb large shrimp in shell (21 to 25 per lb), peeled and deveined
- 1 Tbs vegetable oil
- 1/2 medium white onion, thinly sliced and separated into rings
- 1 large bell pepper, seeded and cut up in thin strips
- 1/4 cup fresh lime juice
- 4 garlic cloves, finely minced
- salt and pepper
- 1/4 Tbs red pepper flakes (optional)
- Garnish: fresh cilantro, minced
- In large non-stick pan, heat up oil and lightly saute onion, bell pepper and garlic. Season the shrimp with salt and pepper, add to pan and cook for 5-6minutes until almost done. Toss in the red pepper flakes, add lime juice and allow to heat through (2-3 mins). Sprinkle minced cilantro on top to serve.
- Serve with green salad and crusty bread or Mexican rice.
