California Casserole
- 1/4 c. butter
- 1 c. chopped onion
- 4 c. freshly cooked rice
- 2 c. dairy sour cream
- 1 c. creamed cottage cheese
- 1 large bay leaf, crushed
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 (4 oz.) cans chopped green chilies
- 2 c. grated sharp natural Cheddar cheese
- Preheat oven to 375u0b0.
- Lightly grease 12 x 8 x 2-inch baking dish.
- In hot butter in large skillet, saute onion until golden. Remove from heat.
- Stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper; toss lightly to mix well.
- Layer half the rice mixture in bottom of baking dish, then half of chilies. Sprinkle with half of Cheddar cheese.
- Repeat.
- Bake, uncovered, for 25 minutes, or until hot and bubbly.
