Orange Ginger Pork Loin W Mango Avacado Salsa

  1. Rinse pork loins and pierce a couple of times to allow the marinade to seep in. Rub Loins with Ginger, Garlic, pepper,and half of brown sugar. Cover wit orange slices and place in an air tight container. Cover with orange juice and soy sauce. Allow to marinate in fridge four or more hours.
  2. Preheat grill so that grates are very hot to score loins. Cook on medium heat 35-45 minutes until medium doneness. Do not over cook.
  3. When the Lion is nearing completion, mix the remaining 2 tablespoons of brown sugar, a splash of orange juice, and a spash of soy sauce togather to make a pasty sauce. Brush the outside of the loin. If using a gas grill turn the heat up to sear and allow the glaze to caramalize.
  4. Allow to set 5 minutes after removing from heat. Slice into medallions, garnish with salsa recipe reccomended above.
