Lori'S Firecracker Chili
- 1 lb. lean ground beef
- 2 medium chopped onions
- 1 bay leaf
- 1 stalk celery, chopped
- 1 1/2 tsp. ground cumin
- 2 (16 oz.) cans tomatoes, cut up
- 2 or 3 pickles jalapeno peppers (1/4 c. chopped)
- water as needed
- 15 1/2 oz. can red kidney beans (optional)
- 1 lb. cubed round steak
- 1 medium green pepper, seeded and chopped
- 2 cloves garlic, minced
- 1/2 tsp. oregano
- 1 (15 oz.) can tomato sauce
- 1/4 c. chili pepper
- 1 1/2 tsp. ground red pepper
- salt and pepper to taste
- In large kettle, brown cubed round steak in oil with 1 medium chopped onion, 1 clove minced garlic, cumin and 1 teaspoon chili powder.
- Add 2 cups water.
- Bring to boil, reduce heat and cook down until liquid is almost gone.
- Set aside.
