'Healthful' Salad, Courtesy Of The Dan Panorama Hotel, Tel Aviv
- Healthful Salad
- Ingredients:
- A handful of arugula leaves
- 1 glass of boiled quinoa ( either red black or white)
- 3 big Portobello mushrooms cut and roasted
- 10 Kalamata olives without seeds
- 2 radishes thinly sliced
- 2 spoons of roasted nuts ( sunflower, pumpkin, walnuts)
- Purple onion rings
- A few lentil sprouts and basil
- 4 roasted cherry tomatos
- Orange and mustard marinade:
- 3 spoons of red grapefruit juice
- 3 spoons of fresh orange juice
- 3 spoons of fresh lemon juice
- 1 teaspoon of mustard
- 1 teaspoon of honey
- 6 spoons of olive oil
- 1/2 teaspoon of poppyseed
- salt
- 1.tut all the ingredients of the marinade in a closed jar carefully sealed and shake forcefully.
- 2.thake all the salad ingredients, except from the onion beans sprouts and tomatos, with the marinade.
- 3.tut the salad in a bowl and spread the bean sprouts tomatoes and onions on top.
