Fish Stroganoff
- 1 1/2 lb. skinless fish fillets
- about 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 6 strips bacon
- 2 Tbsp. chopped onion
- 1 1/2 c. tomato juice
- 1 tsp. prepared mustard
- 1/2 tsp. parsley flakes
- 1/4 tsp. garlic powder
- 1/2 c. sour cream
- Cut fish in bite-size pieces.
- Mix flour, salt and pepper. Coat each piece.
- In large frying pan, cook bacon until crisp. Remove bacon from pan and reserve.
- Cook onion and fish in bacon fat over medium heat until lightly browned.
- Reduce heat and mix in tomato juice, mustard, parsley and garlic powder.
- Simmer until sauce thickens slightly, 5 to 10 minutes.
- Remove from heat and stir in sour cream.
- Serve over hot cooked rice or toast points. Crumble bacon and put on top of each serving.
- Serves 6.
