Chili Cheese Chicken
- 2 Lb.of boneless chicken thighs
- 2 Tbs of olive oil
- 2 Plum tomatoes cored seeded and diced
- 2 Tbs. of chopped cilantro
- 1/2 Cup of julienned green pepper
- 2 Cloves of garlic minced
- 2 Tbs of chopped red onion
- 1 Tbs of chili powder
- 1 Tbs of ground cumin
- 6 oz. Shredded Colby Jack Cheese
- Dash of Cayenne Pepper, more if you want to spice it up
- 1/2 Tsp of salt
- 1/8 Tsp of pepper
- Preheat oven to 400 degrees
- Whisk together olive oil, garlic, chopped cilantro, salt, pepper, cumin, chili powder, and cayenne pepper in a bowl. Mix well
- Add chicken to the bowl and coat well
- Transfer the chicken to a casserole dish
- Evenly distribute the green pepper, onion, and tomato over each piece of chicken.
- Place casserole dish in preheated oven for approximately 25 minutes until the juices run clear when pierced or the temperature of the chicken reads 165 degrees on an instant read thermometer.
- When done remove chicken from the oven and immediately top with cheese
- Garnish with the cilantro and serve.
