Chili Cheese Chicken

  1. Preheat oven to 400 degrees
  2. Whisk together olive oil, garlic, chopped cilantro, salt, pepper, cumin, chili powder, and cayenne pepper in a bowl. Mix well
  3. Add chicken to the bowl and coat well
  4. Transfer the chicken to a casserole dish
  5. Evenly distribute the green pepper, onion, and tomato over each piece of chicken.
  6. Place casserole dish in preheated oven for approximately 25 minutes until the juices run clear when pierced or the temperature of the chicken reads 165 degrees on an instant read thermometer.
  7. When done remove chicken from the oven and immediately top with cheese
  8. Garnish with the cilantro and serve.
