Pasta With Sausage And Broccoli Rabe
- 1 lb. sweet Italian sausage
- 2 garlic cloves, minced
- 1 bunch broccoli rabe, rinsed, trimmed and cut into 2 inch pieces
- 1 box pasta (16 oz. penne, mostaccioli, campanelle, or other hearty shape)
- 1/4 cup heavy cream
- 1/4 cup cubed Bel Paese
- Salt
- Freshly ground pepper
- Cook pasta in salted boiling water according to package directions.
- Heat a large skillet over medium/high heat. Remove casings from sausage and brown in skillet, breaking up the sausage with wooden spoon. Once browned, add garlic and cook until fragrant. Add broccoli rabe and cook until leaves are wilted and stems are still crisp.
- Meanwhile, drain pasta and return to pot. Add heavy cream and heat through. Add the Bel Paese; heat one minute and then toss pasta until coated with sauce.
- Throw in sausage and broccoli rabe mixture and toss with pasta until combined.
