The Best Bbq Ribs

  1. Remove the membrane from the back of the ribs. With the membrane removed rinse off the ribs and pat dry with some paper towels. Coat the ribs in prepared yellow mustard. Coat ribs with seasoned black pepper.
  2. Light the charcoal about 30 to 45 minutes before you are ready to cook. The charcoal should have a light coating of gray ash on it and there should be no flames, but the heat should be a medium hot fire.
  3. Spray the grate with oil and place over the hot charcoal. Allow the grate to preheat, about 4 to 5 minutes. Place ribs on the grill directly over medium-hot coals and cook for about 5 minutes. Turn ribs over and continue to cook for about 5 minutes. Brush ribs with barbeque sauce and place cover back on grill, cooking for 5 more minutes. Turn ribs and repeat process. Total cooking time will be 20 to 25 minutes.

  5. Bring beef stock, vinegar, liquid smoke and Worchestershire sauce to boil. Add salt, sugar and brown sugar. Stir until dissolved. Add chili powder, mustard and tomato paste, stirring until blended. Add red pepper flakes. Simmer for 2 hours. Makes one quart.
