Bow Tie Pasta With Asparagus
- 2 cups bow tie pasta
- bunch of asparagus, chopped into 1 inch pieces
- 1/2 medium onion thinly sliced
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 2 cloves garlic, finely chopped
- parmaesan cheese for garnishing
- salt
- pepper
- oil
- Boil the pasta, this should take about 8 to 10 minutes.
- In the mean-time, heat a pan with some oil, and add the asparagus. Cook for about 3 minutes. Once done, keep the asparagus aside.
- In the same pan, add garlic and onion and saute them till they are cooked. Add lemon zest, juice and asparagus to the pan and turn off the heat.
- Keeping some of the pasta water, add the pasta to the pan and mix it, adding pasta water as needed, and seasoning with salt and pepper.
- Garnish with some shaved or shredded parmaesan cheese. Enjoy!
