Ricotta Rollups
- Ingredients
- Dough
- 4 cups flour
- 1 lb. margarine softened (not butter)
- 1 cup ricotta cheese
- 2 egg yolks, slightly beaten
- Filling
- 3 cups walnuts chopped fine
- 2 tsps cinnamon
- 2 cups sugar
- 3/4 c ricotta cheese
- Powedered sugar to sprinkle on top
- Instructions
- Make Dough
- Cream together flour and margarine. Mix in 1 cup ricotta cheese & 2 egg yolks. Shape dough into 8 equal balls and wrap in wax paper. Refrigerate at least 3 hours and preferrably overnight.
- Make Filling
- Mix filling ingredients in a small bowl.
- Roll each ball into a 12x6 rectangle, spread each with 1/8th filling. Roll from the long side. Cut each roll diagonally into 1 inch pieces.
- Bake in a 375 degree oven on ungreased baking pan about 20 minutes. Watch them!
- Sprinkle with powdered sugar (through a sieve or a shaker)immediately. Allow to cool on a rack.
