Ricotta Rollups

  2. Make Dough
  3. Cream together flour and margarine. Mix in 1 cup ricotta cheese & 2 egg yolks. Shape dough into 8 equal balls and wrap in wax paper. Refrigerate at least 3 hours and preferrably overnight.
  4. Make Filling
  5. Mix filling ingredients in a small bowl.
  6. Roll each ball into a 12x6 rectangle, spread each with 1/8th filling. Roll from the long side. Cut each roll diagonally into 1 inch pieces.
  7. Bake in a 375 degree oven on ungreased baking pan about 20 minutes. Watch them!
  8. Sprinkle with powdered sugar (through a sieve or a shaker)immediately. Allow to cool on a rack.
