Moulded Salad
- Mayonnaise or cream cheese - 3 cups
- Carrot, grated - 1 small one
- Cucumber, chopped - 1/2
- Green chilies, small, minced - 3
- Apple, chopped - one small one
- Green Capsicum, chopped {remove seeds too} - 1/4
- Red Capsicum - 1/4
- Tomato, chopped - 1 small
- Celery - 1 stalk or coriander leaves - a few
- Nuts, pine, cashew, almonds - 4 tbsps
- panneer or tofu, chopped small - 1/4 cup {available in all Indian shops}
- Cream cheese - 2 tbsps
- Salt and pepper to taste
- Sugar - 1/4 tsp
- Mustard powder - 1/4 tsp
- Gelatin - 3 tsps dissolved in 1/4 cup of water
- Decoration
- Lettuce - few leaves shredded, cucumber - one small chopped
- Tomato - 1 small chopped, carrot - 1/4 small chopped
- Method:
- 1. Soak gelatin in cold water. Dissolve it in hot water after 10 minutes.
- 2. Meanwhile, mix mayonnaise with all the vegetables, panneer/tofu, apple and nuts.
- 3. Add the melted gelatin. Mix thoroughly.
- 4. Beat the cream cheese till smooth, add salt pepper sugar and mustard and add this to the vegetable mix.
- 5. Mix and pour into a ring mould {a mould with a hole in the centre}. Freeze 1/2 to one hour.
- 6. Remove and keep in fridge.
- 7. Un-mould and decorate by keeping the lettuce, cucumber, tomato and carrot around the molded salad.
