Chewy Chocolate Cookies (Wheat-Free)
- 6 large egg whites
- 1 cup granulated sugar
- 1 cup brown sugar
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 Tbsp. vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cup finely chopped pecans
- 1/4 cup lite oil
- 3 oz. melted baking chocolate
- 1 cup chopped chocolate chips
- 1 cup chopped white chocolate

- Place rack in center of oven and heat to 375 degrees. Line cookie sheet with sil-pat or parchment. Beat egg-whites in mixer until stiff, then add sugars, salt, baking soda and vanilla extract. Melt chocolate in microwave, mix with the oiland add slowly to the mixer. Add chocolate powder and chopped pecans. Chop the chocolate chips so they are not as large as usual and add to the mix. Mix will be sort of soupy, so refrigerate until stiffer and drop by mounded teaspoons on cookie sheet
- *Bake at 375 degrees til crackly on top. Cool and then remove from sheets.
