Barley With Greens And Tomatoes
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- salt and pepper
- 2 cups quick-cooking barley
- 1, 28-ounce can diced tomatoes, drained
- 1 cup dry white wine
- 8 cups mustard greens (or spinach), torn
- 2 ounces Brie (or Taleggio), cut into small pieces
- 1/2 cup grated Parmesan (2 ounces)
- 1) heat olive oil in large saucepan over medium heat. Add onion, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and cook 6-8 minutes, stirring occassionally until tender
- 2) add barley, tomatoes, wine and 2 1/2 cups water. Bring to a boil. Reduce heat and simmer, stirring occassionally, until barley is tender, about 15 minutes.
- 3) add mustard greens, Brie and 1/4 cup parmesan and cook, stirring occassionally, until greens are tender ( about 4-5 minutes).
- 4) serve with remaining Parmesan cheese.
