Barley With Greens And Tomatoes

  1. 1) heat olive oil in large saucepan over medium heat. Add onion, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and cook 6-8 minutes, stirring occassionally until tender
  2. 2) add barley, tomatoes, wine and 2 1/2 cups water. Bring to a boil. Reduce heat and simmer, stirring occassionally, until barley is tender, about 15 minutes.
  3. 3) add mustard greens, Brie and 1/4 cup parmesan and cook, stirring occassionally, until greens are tender ( about 4-5 minutes).
  4. 4) serve with remaining Parmesan cheese.
