Carrot Cake Cream Cheese Bars
- Topping:1/2 c ch. walnuts,1 t cinnamon,2 T sugar
- filling:8 oz cr cheese,1 egg,1/4 sugar, 2Tb soft butter,1 T cornstarch , 1/2 t vanilla,8 oz can cr pineapple, drained.
- cake:
- 2/3 c pureed cooked carrots (3-4 carrots), 1/3 c grated raw carrots
- 1 1/3 c flour
- 3/4 t b powder
- 1/4 t b soda
- 3/4 t salt
- 1 3/4 t cinnamon
- 3/4 t g allspice
- 5 1/2 T soft butter
- 1/3 c veg oil
- 1 c lt br sugar
- 1 t vanilla
- 2 t lemon j
- 1 T orange juice
- 2 eggs
- 1/2 c raisins
- 13X9 baking pan sprayed and lines with p paper
- 350 for 35 "
- mix topping ing
- make filling in FP process until smooth, add pineapple by hand
- Cake:
- Mix 2 kinds of carrots in bowl
- sift dry ing
- cream butter oil b. sugar and van in mixer, add juices
- add eggs one at a time,
- add flour mix
- blend in carrots
- add raisins and mix
- spread 2/3 of batter in pan, spread cr chees mix over, then drop rest of batter by spoonfuls over filling, gently spread (might not cover the entire cake)
- sprinkle walnuts over and bake for 35"
