Berry Cobbler
- 1 pt. fresh raspberries (2-1/2 c.)*
- 1 pt. fresh blueberries or strawberries, sliced (2-1/2 c.)*
- 2 Tbsp. cornstarch
- 1/2 c. no-sugar-added raspberry pourable fruit**
- 1 c. all purpose flour
- 1-1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/3 c. milk
- 1/3 c. butter or margarine, melted
- 2 Tbsp. thawed frozen unsweetened apple juice concentrate
- 1/4 tsp. ground nutmeg
- Preheat oven to 375 degrees.
- Combine berries and cornstarch in medium bowl; toss lightly to coat.
- Add pourable fruit; mix well. Spoon into 1-1/2-quart or 8-inch square baking dish.
- In a medium bowl, combine flour, baking powder and salt.
- Add milk, butter and concentrate; mix just until dry ingredients are moistened.
- Drop six heaping tablespoons of batter evenly over berries; sprinkle with nutmeg.
- Bake 25 minutes or until topping is golden brown and fruit is bubbly.
- Cool on wire rack.
- Serve warm or at room temperature.
- Makes 6 servings.
