Succotash
- 2 t olive oil
- 2 shallots
- 2 cloves garlic
- 1 # gr beef (leanest), or any gr meat or firm tofu
- 1 t salt
- 1/2 t black pepper
- 3/4 cup grated carrots
- 10 oz frozen baby lima beans thawed
- 1 14 oz can diced tomatoes undrained
- 1.5 c frozen corn, thawed
- 2 packed cups baby spinach
- 1/4 c fresh parsley, chopped
- 3/4 t lemon zest
- fresh lime juice to taste
- 1. place shallots, garlic and gr beef in skillet over med heat. Add 1/2 t salt and pepper, cook stirring occ until brown
- 2. heat olive oil in soup pot, add carrots and saute 2-3 min, stir in lima beans, beef, corn, and remaining salt
- 3. simmer 5-7 min until veg tender, add veg broth as needed. Add spinach until wilted. Stir in shopped parsley, lemon zest and lime jiuce
