Kale And White Bean Soup
- 1 bunch of baby kale
- 2 t olive oil
- 1 lg onion
- 4 cloves garlic
- 1/4 t red pepper flakes
- One 15 oz can cannellini beans, drained and rinsed
- 3 cups fat free chicken broth
- 2 c water
- 1/2 teaspoon of oregano
- salt and pepper
- parmesan cheese
- Wash kale, slice leaves into ribbon. If using big kale, make sure to cut leaf off of stem because its bitter.
- Heat the olive oil over med lo and saute onion until it begins to caramelize about 15 minutes. Add garlic and red pepper and saute the mix another minute.
- Add beans, broth, water and oregano and bring to simmer.
- Add kale and simmer uncovered until tender about 15 minl. season with salt and pepper and serve in bowls with parmesan cheese on top.
- I added cooked bacon , fresh tomatoes or roasted tomatoes, italian seasoning instead of just oregano, carrots if you want.
