Kathy'S Slow Cooker Chicken
- 2 onions
- 3 cloves garlic minced
- 3 tbsp butter
- 3 tbsp grated ginger
- 2 tbsp brown sugar
- 2 tsp chili powder
- 3/4 tsp gr coriander
- 3/4 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 can diced tomatoes
- 1 cup chicken broth
- 1/4 cup almond or cashew butter
- 3 pounds chicken thighs/breasts
- 1 cup sour cream
- 2 tsp cilantro
- put spices in slow cooker - whisk almond butter & broth together and pour in. Cook on low 5-8 hours. Puree and put back in slow cooker, adding chicken. Cook for an additional 40-60 minutes until chicken is done. Stir in sour cream at end and add cilantro if desired.
