Kelly'S Yummy Baked Cod With Balsamic And Tomatoes
- 4 5 oz cod fillets
- 1 large can crushed tomatoes in puree
- 1 large can of whole peeled tomoatoes
- 1 large onion (red or white)sliced
- 1 package of dried sundried tomoatoes (not in oil) soaked in water. (in most health food stores)
- Preheat oven to 350 degrees.
- Line a large baking dish with tin foil being sure to leave room to wrap up the fish. (longer on the sides)
- Place cod fillets in the dish side by side.
- Place whole peeled tomotoes only (not sauce) all over the fish.
- Pour crushed tomatoes (with sauce) all over fish as well.
- Scatter onions around the fish.
- Seal fish with foil being sure to wrap it up well.
- Bake for 10 min. at which point you open the foil and put the sundried tomatoes on top of the fish.
- Put the oven on broil and broil the fish with the foil open for another 10 min. or so or when fish is flaky to the touch.
- When fish is done serve it on a plate pouring extra sauce from baking dish on top of the fish.
