Herbed Cornish Hens

  1. Rub hens with oil.
  2. Combine oil, salt, pepper, poultry seasoning and cayenne; stir well.
  3. Coat hens with seasoning mixture and refrigerate 3 to 4 hours.
  4. Place hens in 2 (13 x 9-inch) baking pans.
  5. Sprinkle hens with lemon juice, Worcestershire sauce, parsley flakes and celery.
  6. Place 1 green pepper ring and 1 slice onion on each hen; secure with a toothpick.
  7. Pour enough wine into pans to cover bottom.
