Herbed Cornish Hens
- 4 Cornish hens, split lengthwise
- 1 Tbsp. salad oil
- 1 1/2 tsp. salt
- 1 tsp. pepper
- 1 tsp. poultry seasoning
- 8 green pepper rings
- dash of cayenne
- 1 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. parsley flakes
- 1 Tbsp. chopped celery or powder
- 8 slices onion
- Rub hens with oil.
- Combine oil, salt, pepper, poultry seasoning and cayenne; stir well.
- Coat hens with seasoning mixture and refrigerate 3 to 4 hours.
- Place hens in 2 (13 x 9-inch) baking pans.
- Sprinkle hens with lemon juice, Worcestershire sauce, parsley flakes and celery.
- Place 1 green pepper ring and 1 slice onion on each hen; secure with a toothpick.
- Pour enough wine into pans to cover bottom.
