Poppie'S Salad Spectacular Dressing
- 5 - 7 Tsp. = Extra Virgin Olive Oil
- 3 Tsp. = Apple Cider Vinegar
- 4 oz. = Roquefort Cheese
- Pinch = Salt in wooden bowl
- 1 sm. can = Anchovies
- 1 clove = smashed fresh garlic
- 3 Tsp. = Gulden's Spicy Brown Mustard
- 3 Tsp. = Sour Cream (heaping spoonfuls).
- 1 cubed = Hard Boiled egg.
- In a large wooden bowl, place the pinch of salt, garlic and anchovies. Smash the anchovies into a paste until it is all mixed together. Next add the cheese and mix it in. Add a little fat free sour cream at a time and mix it into the mixture. This helps to soften the Roquefort as it is smashed and mixed in the bowl. Then mix in the mustard and olive oil. Add the vinegar and mix well. Lastly, add the hard boiled egg. You can use the egg white only if you like. Let stand in refrigerator for at least one hour prior to serving. This will make enough for 8 people. The dressing will last at least 1 week in the fridge.
