Chicken With Peppers And Tomatoes

  1. Brown chicken in oil about 5 minutes.
  2. Remove chicken and set aside.
  3. Add garlic, tomato and yellow pepper; saute until pepper is tender, about 5 minutes.
  4. Add chicken, basil and wine.
  5. Cover and simmer until chicken is tender, about 20 minutes.
  6. Season with salt and pepper.
  7. Remove chicken, etc., from skillet and keep warm.
  8. Cook liquids down over high heat until half the amount; spoon over chicken.
  9. Serve over rice.
