Chicken With Peppers And Tomatoes
- 4 small chicken breasts, halved
- 2 Tbsp. olive oil
- 1 large clove garlic, minced
- 1 large tomato, peeled, seeded and diced
- 1 large sweet yellow pepper, cored, seeded and cut in thin, bite size strips
- 1 heaping Tbsp. minced fresh basil
- 1/4 c. white wine
- salt and pepper
- cooked rice (optional)
- Brown chicken in oil about 5 minutes.
- Remove chicken and set aside.
- Add garlic, tomato and yellow pepper; saute until pepper is tender, about 5 minutes.
- Add chicken, basil and wine.
- Cover and simmer until chicken is tender, about 20 minutes.
- Season with salt and pepper.
- Remove chicken, etc., from skillet and keep warm.
- Cook liquids down over high heat until half the amount; spoon over chicken.
- Serve over rice.
