Recovery Room'S Chopped Pasta Salad
- 1 cup olive oil
- 1/3 cup balsamic vinegar
- 1 clove garlic, chopped
- 1 tbsp fresh basil, chopped
- 10 oz. green leaf lettue,
- rough chop
- 2 vine-ripened tomatoes,
- quartered
- 3 oz. mushrooms, sliced
- 5 oz. penne pasta,
- cooked and chopped
- 4 oz. bacon,
- cooked and chopped
- 8 oz. grilled chicken,
- chopped
- 6 oz. crumbled gorgonzola
- 1/2 med. red onion, diced
- salt and ground pepper
- Grill chicken and allow to cool (may be done ahead). Cook the pasta per package instructions, rinse and chill.
- In a bowl, whisk the salt, pepper, garlic, basil and vinegar. Slowly whisk in the olive oil until the dressing emulsifies into a smooth sauce.
- Combine the lettuce, tomato, onion, muchrooms, bacon, pasta, cheese and chicken in a large bowl. Pour the dressing over and hand-toss to thoroughly coat. Serve immediately.
