Cold Lemon Chicken

  1. Preheat oven to 350u0b0.
  2. In large skillet, melt margarine over medium heat.
  3. Add chicken breasts and cook, turning once, until light brown, about 4 minutes a side.
  4. Transfer chicken to an 8-inch square baking dish.
  5. Add wine to pan, bring to a boil, scraping bottom of pan with a wooden spoon.
  6. Stir in 2 tablespoons lemon juice and salt.
  7. Pour mixture over chicken.
  8. Cover baking dish with foil and bake for 15 minutes, basting occasionally.
  9. Let chicken cool to room temperature.
