Cold Lemon Chicken
- 2 Tbsp. reduced calorie margarine
- 4 skinless, boneless chicken breast halves
- 1/2 c. dry white wine
- 1/4 c. lemon juice
- 1/4 tsp. salt
- 2 Tbsp. reduced calorie mayonnaise
- 1 Tbsp. minced fresh dill or 1 tsp. dill weed
- lettuce leaves, sprigs of dill and lemon slices
- Preheat oven to 350u0b0.
- In large skillet, melt margarine over medium heat.
- Add chicken breasts and cook, turning once, until light brown, about 4 minutes a side.
- Transfer chicken to an 8-inch square baking dish.
- Add wine to pan, bring to a boil, scraping bottom of pan with a wooden spoon.
- Stir in 2 tablespoons lemon juice and salt.
- Pour mixture over chicken.
- Cover baking dish with foil and bake for 15 minutes, basting occasionally.
- Let chicken cool to room temperature.
