Summer Smash Salad
- Salad
- 12 cups mixed greens, washed, torn into bote size pieces.
- 1 cup sliced strawberries or other whole summer berries, or a mix.
- 1 cup cubed nectarine or 1 10.5 oz. can mandarin orange slices packed in juice
- 1 cup glazed walnuts
- 1/2 cup crumbled blue cheese (opt)
- 1/2 cup cubed cooked chicken breast
- Dressing
- 6 T. balsamic vinegar
- 6 T. olive oil
- 3 T. dijon mustard
- 1. To make salad place all ingredients except nuts, chicken and cheese in a large salad bowl and toss very gently so that ingredients are distributed. Season with salt and freshly ground pepper. Set aside.
- 2. Place dressing ingredients in a bowl and whisk until combined.
- 3. Sprinkle nuts, cheese and/or chicken over salad. Add dressing and mix only until ingredients are coated.
- 4. Distribute salad among 4-6 dinner plates making sure to divide ingtredients evenly. Enjoy!
