Chicken Breasts And With Seed Crust
- canola oil for the pan
- 1/2 c raw pumpkin or sunflower seeds or a combination
- 1 1/2 TB sesame seeds (raw or toasted)
- 1/4 c plain yogurt
- 1/2 tb olive oil
- 1 tsp mustard (Dijon)
- 4 skinless boneless chicken breasts
- set oven at 450. Oil rimmed baking sheet
- in food processor, pulse pumpkin and or sunflower seeds until they form crumbs. Transfer to a shallow bowl and stir in the sesame seeds
- In another shallow bowl stir the yogurt, olive oil, mustard, and sprinkle salt and pepper
- Dip the rounded side of a breast in yogurt mix (don't coat the bottoms) then dip that side int he seed mix. Place seeds side up on the baking sheet. Continue in the same way with the remaining chicken and coatings
- Bake for 15-20 minutes until the chicken is cooked through and the seed coating is golden
