Pasta With Spicy Tomato & Sausage
- 1 lbs sausage with casing removed (1 package of 4)
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 24 oz marinara sauce
- 6 tbsp basil pesto
- 1 lbs penne pasta
- 1/2 lbs smoked gouda or mozzarella cheese, diced
- 1 cup grated parmesan cheese
- 1 6 oz bag baby spinach leaves
- Preheat oven to 375 degrees.
- Oil 9" x 13" baking dish. Spread a thin layer of marinara sauce over bottom of pan, set aside.
- Cook pasta, set aside.
- Meanwhile, in separate sauce pan, cook sausage over medium high heat until no longer pink, about 5 minutes.
- Add onion and saute, 5 minutes.
- Add marinara, reduce heat to medium, simmer 10 minutes.
- Stir in pesto, and salt and pepper to taste.
- In a large bowl, combine pasta with sauce, and remaining ingredients, reserve 2/3 cup of parmesan cheese. Mix well.
- Spoon mixture into pan and sprinkle with 2/3 cups parmesan. (can be made up to 2 days ahead).
- Bake at 375 degrees for 30 minutes.
