Flank Steak Pin Wheels

  1. shingle the grape leaves 3x3 on 2 seperate cutting boards and set aside. using a sharp knife cut the flank into 2 pieces so they are half as thick. then coat each side with soy sauce, salt, and pepper. place each piece on the grape leaves. put 1/2 of the spinach on each spread it over entire meat slice mushrooms thin and split in 1/2 place on spinach then sprinkle on the blue cheese. roll all together tightly. Using the butchers twine tie the log in 4-6(depending on length)places. "you can even wrap in aluminum foil for easy clean up". Bake in oven on 275 degrees for 30 minutes check the temp every 10 minutes after the 30 till you reach 130-135 degrees. remove from oven and let stand for 15 minutes befor slicing. about 1/2-3/4 inch thick. serve hot
