Butterscotch-Oatmeal Spatter Cookies
- 7 ounces butterscotch bits
- 1 1/2 sticks unsalted butter
- 2 tablespoons boiling water
- 1 teaspoon baking soda
- 3/4 cup white sugar
- 1 cup flour
- 2 cups oatmeal
- 1/2 teaspoon vanilla
- *Preheat oven to 350. Line cookie sheets with parchment paper..
- *Cook butterscotch bits and butter in a pot until mostly melted. Dissolve baking soda in boiling water, add to butterescotch mixture and remove pan from heat. Immediately add sugar, flour, oatmeal, and vanilla. Mix.
- *Spoon out small teaspoons (6 per sheet) of the mixture onto cookie sheets-cookies will spread and splatter out.
- *Bake approximately 8-10 minutes (watch carefully). Let cool before removing from pans. Store in a covered container or freeze. .
