Butterscotch-Oatmeal Spatter Cookies

  1. *Preheat oven to 350. Line cookie sheets with parchment paper..
  2. *Cook butterscotch bits and butter in a pot until mostly melted. Dissolve baking soda in boiling water, add to butterescotch mixture and remove pan from heat. Immediately add sugar, flour, oatmeal, and vanilla. Mix.
  3. *Spoon out small teaspoons (6 per sheet) of the mixture onto cookie sheets-cookies will spread and splatter out.
  4. *Bake approximately 8-10 minutes (watch carefully). Let cool before removing from pans. Store in a covered container or freeze. .
