Gourmet Meat Loaf
- 1 Tbsp. butter or margarine
- 1 c. fresh mushroom slices
- 1/4 c. chopped onions
- 1 c. sour cream
- 1 lb. ground beef
- 1 c. uncooked oats
- 1 egg, beaten
- 1/4 c. tomato juice
- 1 tsp. Worcestershire sauce
- 1 tsp. each salt and black pepper
- To make filling:
- In small frying pan, melt butter and saute onion and mushrooms for 5 minutes, stirring.
- Remove from heat and stir in sour cream, mix lightly.
- In large bowl, combine remaining ingredients, mix well.
- In lightly greased 9 x 5 x 3-inch loaf pan, place half of meat loaf mixture down the center, make an indentation.
- Spoon filling into the indentation.
- Place remaining meat loaf mixture over all the filling.
- Press top and bottom layers together and bake in 300u0b0 oven for 45 minutes.
